TOBY'S FINE DINING

The founders wanted to give the people of the Sauk Valley Area a small intimate restaurant serving only the finest foods in the area.

Located in the lower level, Toby's Restaurant completed that dream. We are open Friday and Saturday evenings, Toby’s offers a venue like no other. Reservations only, and once reserved, your table is yours for the evening. It doesn't matter when you arrive or when you leave. Each entree is made fresh, while you enjoy a relaxed comfortable setting, complete with fireplace, view of the course, and rear patio area.

Serving the finest seafood, pork, chicken and Certified Angus Beef as main entrées. Appetizers and desserts are specially made for our guests. Toby's is "Where Time Stands Still" for you. A dining experience like no other in the Sauk Valley Area.

The fine-dining restaurant, which prides itself on its Certified Angus Beef steaks and fresh seafood, offers an experience just a cut above the rest, said Martha Anderson, banquet manager of Deer Valley Golf Club, about 10 miles south of Rock Falls in Deer Grove.

Toby’s operates on reservations only. Guests have their table for the whole evening.

"It's completely theirs," Anderson said. "No matter when they come, their table will be ready, and they come to enjoy themselves with good food, good wine, good company. It’s just cozy and comfortable."

Certified Angus Beef
The restaurant, which opened in November 2011, serves premium steaks (ribeyes, filets and New York strips) with classic toppings, such as sautéed mushrooms, grilled onions or bleu cheese. Toby’s also serves mouthwatering prime rib.

The restaurant offers seafood -- The salmon with teriyaki glaze and sea bass with lemon, butter, and wine sauce, are favorites -- as well as chops, chicken, and pasta.

Toby’s also has decadent desserts, including "Timeless Chocolate Cake", and "Toby's Style Cheesecake".

Each meal is prepared fresh, and most are accompanied by homemade bread.

Toby's features a list of fine wines exclusive to the restaurant outside the Chicago area to complement its menu.

The dining room is warm and inviting with a wall of windows that offers a beautiful view of hole No. 5 of Deer Valley Golf Club. Guests need not dress formally to fit in at the restaurant.

"It's higher-end but comfortable" Anderson said.
Toby's private room is available for special occasions, such as birthdays, anniversaries, or class reunions, and is a wonderful setting for private parties.

"AN EVENING VVITH FRIENDS"

Three lifelong friends, who grew up no more than three houses apart, enjoyed a three hour dinner with their wives, as what can only be described as, "The find of the millennium". To call Toby's a restaurant would be similar to saying Michael Jordan is a basketball player, or Itzhak Perlman is a violinist, or Phil Mickelson is a golfer. All statements would be factually correct yet obscure of the truth.

For those who may be reading this who are not yet familiar with Toby's, located at the Deer Valley Country Club south of Rock Falls, some details of this report will be purposefully left out, so as not to reveal all which this culinary experience has to offer.

Intimately set in the walk-out lower level of the country club, this night looking out over the snow covered fairways of the golf course, one could easily imagine having been transported to a hidden resort in any number of exotic locations around the globe. The crackling fire in the corner hearth provides a warm, pleasing glow on this cold February evening. Greeted by an impeccably mannered Maitre d', one gets the feeling this is going to be a night to remember.

Everything from the setting, to the decor, to the arrangement of the tables, to the soft music lightly floating in the air, gives you the impression those responsible for designing this oasis wanted their guests to feel surrounded in the most comfortable of environments. In this, they have succeeded in spectacular fashion.

Seated around the table, one soon realizes one of the key differences which separates Toby's from every other establishment; the pace of the evening is what you decide it to be, not what a reservation schedule dictates. The table you have reserved is yours for the evening. If you want to linger over an aperitif for 10 minutes or an hour, it is up to you. When you order your appetizer, salad, entree, or dessert, is entirely up to you. There is no rush to move on to the next course. You finish each course before the next one is presented to the table.

Speaking of presentation, much is made of how 'fancy' establishments 'present' their courses. The arrangement of tomatoes and onions on the salad plate, the position of the vegetable in relation to main entree, how the chocolate sauce is drizzled onto the dessert plate. All these things are given careful attention. Toby's seamlessly and simultaneously matches exquisite presentation with succulent flavor.

Conversation is uninterrupted by the server's need to obtain your salad dressing preference or which side dish you would like with your entree. Somehow, whoever trained the staff has done what few other similar businesses even try to accomplish. The service staff not only knows what they have to do, but they carefully observe their guests to see when the guests are ready to move on to the next course.

This partially completes the picture of the truly remarkable experience that Toby's provides. Little has been said about the food. As was suggested at the outset, some of the details of this report have been left out so as to leave plenty for your five senses to experience the rest for yourself.

Spoiler Alert: The aroma of the local Angus beef wafting through the air is enough to turn the most ardent vegetarian into a carnivore. Be assured, there is a superlative degree of quality to each and every course. Leave room for dessert.

One other thing to add; Prior to meeting the chef, we would have guessed him to be a seasoned veteran of high end kitchens, likely to have graduated from one of the finest culinary schools in the world. Imagine our surprise when we met young Mr. Anderson. Personable, professional, knowledgeable, and so young. Oh, the future which lies ahead for him!

Toby's is open Friday and Saturday evenings, and on other dates such as Valentine's Day, New Year's Eve, and other select dates.

As for my three friends and their wives, plans are in the making to return for another great evening in a peaceful environment of food, wine, conversation, and the making of truly special memories.

Toby's... it's not just a great meal, it's a great memory!
